Maple Cornbread Muffins


Perfect for fall, these Maple Cornbread Muffins have a subtle maple flavor and sweetness. They go beautifully with the cozier foods of autumn, such as beans, casseroles, and all things slow cooker.

Maple Cornbread Muffins  Print
Makes 12 muffins

1 cup sifted flour
1 cup cornmeal
2 teaspoons baking powder
1 teaspoon salt
1 cup milk
1 egg, beaten
1/4 cup real maple syrup
2 tablespoons melted butter, slightly cooled, for batter
3 tablespoons butter for muffin pan

1. Preheat oven to 400 degrees. Put a generous 1/4 teaspoon butter in each cup of a 12 cup muffin pan and set aside.

2. In a large bowl, whisk the dry ingredients together and then sift. In a small bowl, whisk together the milk, egg, syrup, and melted butter. Pour the wet ingredients into the dry ingredients and mix until just combined. The mixture will be somewhat thin and have a few small lumps. Let the mixture sit for about a minute before filling the muffin pan.

3. While the mixture sits, place the muffin pan in the preheated oven, just long enough for the butter to melt and get hot, about one minute. Remove the pan from the oven, and very carefully swirl the pan so that the melted butter comes up the sides of the cups somewhat.

4. Evenly divide the cornbread mixture into the muffin cups, filling each about 3/4 full. Bake until golden brown, about 20 minutes. Let cool in pan on a wire rack for 5 minutes, then remove muffins from pan onto wire rack. Serve warm with maple butter, if desired.

Maple Butter: Mix 6 tablespoons softened butter with 2 tablespoons real maple syrup until creamy and smooth. This is very good on pancakes, too.

Supreme Pizza Pasta


This colorful pasta dish really does taste like a slice of pizza with everything on it!

Supreme Pizza Pasta
Makes about 3.5 quarts

For the pasta:
1 package (12 oz.) whole grain pasta
1 medium red onion, sliced and then halved
1 large green bell pepper, diced
1 tablespoon olive oil
10 oz. cherry tomatoes, halved
8 oz. baby bocconcini
1 medium red onion, sliced and then halved into half circles, separated
1 large green bell pepper, diced
4 oz. cooked, crumbled sausage (I used turkey)
2 oz. pepperoni, cut into strips (I used turkey)
1 (2.25 oz.) sliced black olives, drained

shredded parmesan cheese for serving


For the dressing:

1/2 cup olive oil
1/2 cup red wine vinegar
3/4 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasoning
1/4 teaspoon dried parsley

Directions:

1. Cook pasta according to directions on package. Drain and rinse in cold water until cool. Drain well, then place in a large serving bowl.

2. While pasta cooks, saute the onion and bell pepper in 1 tablespoon olive oil until crisp tender. Toss into pasta, then add tomatoes, bocconcini, sausage, pepperoni, and olives.


3. In a medium bowl, whisk together all the dressing ingredients until well-combined. Pour over pasta mixture and mix well. Sprinkle with parmesan cheese. Serve at room temperature or cold. Refrigerate leftovers.

We preferred the pasta at room temperature. The next day, we warmed individual servings slightly in the microwave.

Homemade Baking Mix (Bisquick)


Baking mix, such as Bisquick, can be convenient to use now and then, but you may not always have it on hand. Or you may not want some of those extra chemicals that are found in a commercial mix. Also, some of my friends have told me that baking mix is not available in their area. Here's an easy way to make your own.

[After I first published this, I have done a little more experimenting. In response to readers' questions, I have tried this recipe using butter instead of shortening, and it worked great. I used very cold butter; I even put it in the freezer for 5 minutes before using. Also in response to questions, I tried using a combination of all purpose and whole wheat flour: half AP and half WW. I sifted the whole wheat flour before measuring. Again, this combination worked beautifully, and it made delicious biscuits. I also tried adding some baking soda to the recipe, and I think I prefer the texture of the baked products when using the baking soda. It works fine without it, I just kind of like it better "with". I have adjusted the recipe to reflect these changes].


Homemade Baking Mix
Makes 1 cup of baking mix equivalent
Can double or triple recipe

1 cup all-purpose flour (or 1/2 cup all purpose and 1/2 cup whole wheat)
1 and 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon baking soda

1/8 teaspoon sugar (optional)
1 tablespoon vegetable shortening (such as Crisco) or cold butter

1. Whisk or sift dry ingredients together in a bowl. 
2. Cut in shortening or cold butter with a pastry blender until you get a fairly uniform mixture with lumps the size of small peas.

If not using immediately, refrigerate in an airtight container.

Homemade Chocolate Pudding with Pie Crust Dippers



This is a rich, delicious, milk chocolate pudding. Kids (and grown-ups!) love using the dippers.

Homemade Chocolate Pudding  Print Recipe

4 to 5 servings

1 and 3/4 cups milk

1 cup sugar
3 tablespoons flour
2 tablespoons cocoa (use 3 tablespoons for more of a semi-sweet chocolate taste)
3 egg yolks
1/8 teaspoon salt
1 tablespoon butter
1 teaspoon vanilla

In a medium saucepan off heat, whisk together the milk, sugar, flour, cocoa, and salt until smooth. In a small bowl, whisk the egg yolks until smooth, then whisk yolks into milk mixture until completely incorporated.

Place saucepan onto medium-low heat, and whisk continuously until mixture begins to thicken and then bubble (about 8 to 10 minutes). After mixture begins to bubble, continue to cook and whisk for an additional two minutes. Remove from heat. Stir in vanilla and butter, and whisk gently until butter is completely melted.

Pudding can be served warm or cold. Leftovers should be refrigerated. If refrigerating, cover surface of pudding completely with plastic wrap (wrap should lie on the surface of the pudding). This will prevent a skin from forming.

(This pudding recipe makes a great chocolate pie filling, by the way. Just reduce milk by 1/4 cup (from 1 and 3/4 cups to 1 and 1/2 cups). Makes one, nine inch pie).

Plain dippers, without egg wash or sugar. You can prick them with a fork before baking if you wish- it will prevent the crust from puffing up.


Pie Crust Dippers
Preheat oven to 350 degrees. Line a large cookie sheet with parchment paper.

You will need one single crust recipe of pie dough (or one single refrigerated pie crust) and one whole egg or egg white for egg wash (egg wash is optional). Onto a lightly floured surface, roll the dough out as for pie. Cut 1" X 4" strips with a knife, or cut shapes with cookie cutters. If not using egg wash, lay pieces out on prepared cookie sheet.


The egg wash is optional, but it does two things: it makes the dippers shiny, and it helps the sugar sprinkles to adhere. For egg wash: in a small bowl whisk together the egg (or egg white) with 2 teaspoons water. With a pastry brush, brush cut shapes lightly with egg wash. Bake as is, or sprinkle lightly with sugar (I used sparkling sugar). Lay pieces on prepared cookie sheet.

Bake until light golden brown, about 15 minutes. Let cool on cookie sheet for 5 minutes, then remove dippers onto a wire rack to cool completely. When cool, dippers may be used right away, or stored in a covered container. 



Since the pudding is my Grandmother's recipe, I thought she'd think it was fun that I served it in one of her teacups. :)
